Chicken Doria (Japanese Rice Gratin) チキンドリア
(Makes 2 gratins)
1. Slice the onion and mushroom; dice the chicken into small pieces. Then sauté the onion, and stir fry the chicken and mushroom (use shimeji mushrooms if available).
2. Make the white sauce by first melting the butter on low heat, then combine with flour. Once well combined, add milk and cook on low heat. Stir constantly till the sauce is thick and lump free. Add nutmeg, salt, and pepper to taste.
3. Add the white sauce to the stir fry from step 1.
4. Layer the gratin (from bottom to top): sauced meat > cooked rice > sauced meat > cheese (we used a mix of cheddar and mozzarella). Then put in the oven for around 5 minutes or till the cheese is melted.
