昭和レトロ♡喫茶店風のオムライス



Omurice (Japanese Omelette Rice) オムライス
1. Chop onion, carrot, and mushrooms into fine pieces. Cut chicken into small pieces. Sauté the onion first, then add the chicken, carrot, and mushroom pieces. Stir fry them till the chicken is cooked.
2. Add Ketchup, tomato purée, and butter to the stir fry, and mix well. Then add warm cooked rice and combine till all the rice is evenly coloured. Set the fried rice aside.
3. Put a thin layer of oil on a clean nonstick pan. Spread 2 beaten eggs on the pan to make a crepe-like omelette. Cook on a medium heat. Patience is the key! When the omelette is nearly cooked, add the fried rice to one side. Leave some space on the edges.
4. Fold the other side of the omelette. Then slowly slide the omelette down the edge of the pan, so that the space you have left in step 3 will wrap one side of the rice. Flip the pan and transfer to a plate to serve. See a slow motion video below:
If needed, wrap the omelette rice in a kitchen paper and adjust the shape with your hands while it is still hot.
Serve with Ketchup sauce (ketchup 3 tbsp + tomato puree 1 tbsp + water 1 tbsp + butter cooked on a low heat) or simply drizzle ketchup on top of the omelette rice.
